Verb doubled and capped with 看: do the action briefly as a trial and see how it comes out.

字源 FORM what the parts do

看 sits at the end of the doubled verb: a hand (手) flat above an eye (目), shading the gaze to see far. The verb said twice is one light dab; 看 holds the eye on what the dab produces.

V一下 just softens the action to a quick once (看一下 = take a quick look). VV看 adds the eye on the outcome: 看看 = look and judge what you find. The 看 in VV看 watches the result; the 一下 only shortens the doing.
V過1
過 logs an action already lived through (吃過 = have eaten it before); VV看 proposes a fresh trial now (吃吃看 = take a bite and see). One reports the past, the other tests the present.

verb not doubled: 你吃看 → 你吃吃看
doubling only half a two-syllable verb: 試看看 → 試試看 (double the whole verb, then cap with 看)
