1Set 在 in front of the verb to mark it underway.Is this an action in motion, not a fixed state? Use 著 for a held state.
2Add 正 in front of 在 to pin it to this exact instant.Does 正 land on the moment? 正在 sharpens 在 to right now; drop it and 在 still works.

Mum is in the middle of wrapping dumplings right now.

在 progressive在 marks the action underway; 正在 adds 正, squaring it onto this very instant. 正在 is the sharper, right-now form.
著正在 is an action in motion (mum is wrapping); 著 is a state held open (the door stays shut). Motion vs holding still.
了1正在 catches it mid-motion; 了 reports it finished. Action running vs action done.
媽媽正在包餃子了。 → 媽媽正在包餃子。 (正在 is mid-action; 了 closes it — they pull opposite ways)
門正在開。 (for a state) → 門開著。 (a held state takes 著, not the progressive)
正包餃子 → 正在包餃子 (正 leans on 在; it does not mark the progressive alone)
English -ing covers both motion and held state; Mandarin splits them: 正在/在 for motion underway, 著 for a state held in place.
